Last week, I had the privilege of presenting Rubi Protein - Plantible at the The Culinary Institute of America, during a session organized by The Good Food Institute on ‘Protein Diversification: Expanding Chefs’ Toolkit for Tomorrow’s Menus.’ Beyond showcasing a new protein, the most inspiring part for me was baking side by side with CIA chefs and exploring how Rubi can simplify their work by tackling real egg challenges : streamlining processes, reducing costs, meeting allergen-free demands, and improving sustainability. We ended the session with a tasting of egg-free macarons, chocolate mousse, and marble pound cake, proving that functionality and flavor can truly go hand in hand. Over the past year we’ve turned a patch of West Texas ranch land into a high-tech engine for sustainable nutrition. This 100-acre commercial facility is a model for protein manufacturing globally. • Tons of Rubi Protein™ produced to replace eggs and synthetic emulsifiers and lemna leaf greens nutritious green leaf powder to provide proteins, fiber, phytonutrients, vitamins and minerals • Avoiding 8,000 t CO₂-e annually by swapping out animal-based and petro-derived ingredients. • 32 new skilled jobs created so far—lifting median income in Schleicher County by ~60%. Key enablers: • Equipment upgrades that increase output and enhances profitability • A proprietary high-yield lemna strain • Partnerships with innovators to advance accessibility and availability of delicious and nutritious protein solutions. This milestone proves that science-driven food solutions can thrive in rural America—generating economic opportunity while reinforcing the global food supply chain. Next up: further expanding capacity, advancing even higher-yield strains, and hiring more local talent to keep pushing the frontier of sustainable food production.
