Phytokana Ingredients Inc. is working with #CDLAlumni Maia Farms to turn Canadian-grown fava beans into ingredients that can be used in plant-based foods. Phytokana will process fava into protein concentrate, starch flour and fava flour, ingredients that can be used as in dairy alternatives, plant-based meats and other food products. The company will also supply Maia with their fava ingredients, which Maia will use to create new mycelium-based ingredients.
