Have you noticed changes in the makeup of the supermarket bread aisle in recent years? The so-called "bread wall" in grocery stores is evolving amid shifting consumer preferences and an influx of new offerings from manufacturers, industry executives and analysts say. Milling & Baking News has the story. Current trends point to declining shelf space for traditional soft white and wheat loaves as their sales continue to fade and shopper uptake grows for premium bread, specialty bread, better-for-you bread and smaller loaves, along with an expanding variety of buns, rolls and breakfast bread. Flowers Foods & Subsidiaries has been testing a different shelf set with some grocery retailers, said Ryals McMullian, chairman and CEO. He explained that changes are afoot in the grocery store bread aisle as customers grapple with a plethora of options. “I think the bread wall, if you will, is going to change a lot because of that,” he told investors at the Barclays Global Consumer Staples Conference. “It’s a very difficult category to shop for consumers. There are a lot of SKUs on the wall. It’s not organized in a very intuitive way.” Healthier, better-for-you bread items have drawn increasing focus from shoppers, said Ryan Paterakis, co-principal and senior vice president of sales and marketing at H&S Bakery Inc. “I think we’ll see a shift in how things are merchandised in the store,” he said. “You’re not going to see a crazy amount of white bread lining the top two shelves. You look at the layout of the shelf, and it’s so many different varieties. Sustralian supermarket chain Woolworths has extended its Lower Shelf Price initiative to include 130 additional products, bringing the total to more than 800 items. Woolworths group CEO Amanda Bardwell stated: “Our customers have told us they want the everyday items in their shopping at prices they can rely on. That’s why we have locked-in lower shelf prices on more than 800 items – including olive oil, cheese, tuna and rice."
