Small but Mighty: The Sustainability Power of Mushrooms As part of the CIA Healthy Kids Collaborative Planet Forward Group, we’re spotlighting foods that nourish kids and the planet—starting with mushrooms! #DidYouKnow mushrooms are among the most sustainably produced foods in the U.S.? They require minimal land, water, and energy to grow. In fact, it takes just 1.8 gallons of water to produce a pound of mushrooms—a fraction of what’s needed for many other foods. Plus, mushroom beds are stacked vertically in growing facilities, making the most of limited space. One acre of land can produce up to 1 MILLION pounds of mushrooms. That’s a whole lotta ‘shrooms! Even better: the soil used to grow mushrooms is made of composted materials. After harvest, it’s recycled and reused for things like potting soil—turning waste into a resource. Our global food system has reached a critical turning point, trapped in a vicious cycle that both affects and is affected by climate change. Over the past 6 months, I’ve had the chance to research a topic that has changed the way I think about our food system: how do we keep valuable resources circulating within the food system, rather than losing them to lower-value uses, or landfill. While working on a strategy for Agrain by Circular Food Technology, I came across two frameworks that have shaped my thinking: The first is Ellen MacArthur Foundation's "Circular Design for Food Framework", which encourages us to move beyond merely reducing negative impacts and instead actively create sustainability by regenerating ecosystems and building natural capital. The framework identifies upcycled food ingredients as one of four key opportunities to do this. These ingredients are food or beverage waste streams that would otherwise not be consumed by humans, instead ending up as animal feed, fuel, or landfill. Upcycled food ingredients, especially those rich in fibre and protein, such as brewer’s spent grain, can help meet growing nutritional needs without increasing pressure on land and water. In parallel with circular food design is WRAP’s "Food and Drink Material Hierarchy", which provides a clear benchmark for prioritising waste reduction in the food and drink sector. It ensures resources remain at their highest value within the food system, starting with waste prevention and retaining calories for human consumption, followed by feed and fuel. Sustainable food is important for a better world. This kind of food is Ecologically Responsible. It involves low greenhouse gas emissions. Soil and water quality are maintained or improved. Biodiversity and ecosystems are protected and preserved. Livestock must be treated humanely. Sustainable food is also Fair and Accessible. Farmers, fishers, and food workers have a livable income. All people have access to basic, affordable, nutritious diets. It promotes justice and fair trade in countries in the global south. People live with dignity in sustainable rural communities. Sustainable food is Local. It supports local farms, fishers, producers, businesses, and community development. Buying local food minimizes food miles traveled. This also reduces greenhouse gas emissions. Local food provides high quality and freshness. Sustainable food creates No Waste. Packaging and waste are kept out of landfills. Fewer resources are used to meet needs. Reusing keeps materials in circulation. Finally, sustainable food is Healthy. Healthy food is a key foundation for healthy humans. ☕ It’s International Coffee Day, and we want to make it about imagining the future of coffee: traceable, regenerative, and fair. And today, we’ve got some exciting news to share. Fairfood, PROTEEN and Emata are joining forces with Ugacof-Sucafina in a €2.5M programme co-funded by EIT Food to scale proven models for truly sustainable coffee farming. By 2026, the programme will reach more than 15,500 farmers across six washing stations. Together, we will equip farmers to cut production costs with fertiliser made from coffee waste, unlock affordable finance to support regenerative practices and create new income streams from them. And, as the moment calls: we'll ensure real-time transparency from farm to cup. At Climate Week, during my panel discussion on the future of coffee and regenerative agriculture with Santiago Gowland, CEO of the Rainforest Alliance, we announced that Nestlé Nespresso SA will be the first company to source coffee certified under the Rainforest Alliance's new regenerative standard. Our partnership with the Rainforest Alliance spans over 20 years, beginning with the AAA Sustainable Quality Program. Supporting this new certification is the natural next step in our work to reshape agricultural practices to restore coffee ecosystems and strengthen farmer livelihoods. Consumers will see the certification seal on select Nespresso coffees from Costa Rica and Mexico starting in 2026. ☕ World Coffee Innovation Summit – Day 1 Recap & Day 2 Ahead Exploring the future of sustainable and regenerative coffee value chains. The first day of the World Coffee Innovation Summit in London set the tone for an inspiring and forward-thinking event — where sustainability, innovation, and producer empowerment took center stage. 🌿 Turning regulatory compliance into opportunity The day opened with a panel on “Turning Regulatory Compliance into Business Strategy – Adapting to EUDR, CSRD & CS3D,” chaired by Agnieszka de Sousa (Bloomberg News). Speakers including Nicolas Mounard (Barry Callebaut Group), Rachel Vujovic (ALDI SOUTH Group), and Andrea Olivar (Solidaridad Network) explored how new EU regulations can drive transparency, accountability, and brand value — transforming compliance from a challenge into a catalyst for change. 💻 Digitalising coffee & cocoa supply chains Next, Harper McConnell (Mars) and Thomas Delbar (Touton Specialty Coffee) shared insights on digital transformation during the fireside chat on supply chain sustainability. Discussions focused on how technology, data, and collaboration can strengthen traceability, improve livelihoods, and rebuild consumer trust across value chains. 🌍 Beyond the farmgate: systemic perspectives on profit, planet, and progress To close the day, Emma Clarke (WaterAid) moderated a dynamic conversation featuring Stefan Dierks (Melitta Group), Saurabh Pratap (Standard Chartered Bank), and Leonard Faustine Zimbheya (KPD PLC, Tanzania).
