Most people remember the wait staff—the “front of house.” But anyone who’s worked in a restaurant knows the magic comes from what you don’t see: the coordination, the constant restocking, the quiet problem-solving in the back that makes the entire experience seamless. You share a few preferences, maybe some casual conversation, and the server seems to instantly convert that into a complete meal. Token in, token out. Meanwhile, behind the scenes, teams are cooking, cleaning, resolving conflicts, and keeping the whole operation running. That’s the promise of agentic AI: systems that work tirelessly in the background to orchestrate tasks, remove friction, and deliver outcomes that feel simple on the surface but are incredibly complex underneath. What AI Can (and Can’t) Fix in Hospitality Lately, I’ve been thinking about how AI is changing the hospitality industry. AI can optimise menus, reduce food waste, and handle admin faster than any of us. But it can’t replace that feeling of being looked after the warmth, the care, the creativity that makes hospitality so human. The opportunity, then, isn’t to replace people , it’s to remove the friction that stops people from doing what they love. Imagine a restaurant where: Menu costing updates itself after every order. Staff schedules run automatically. Customer feedback flows straight into one dashboard. AI isn’t here to take the “heart” out of hospitality ,it’s here to protect it.
