A career as a chef has allowed Thais Gimenez to pursue many of her passions in life and travel the world. It also appeals to her practical nature and enthusiasm for achieving solid results. However, the path to cheffing wasn’t immediately obvious to Thaís. Having first set her sights on a career as a journalist and fine arts; she completed a social sciences degree in her native Brazil before pursuing further studies in gastronomy. Thaís qualified as a chef with a particular passion for pastry. Some 18 years later she can already look back on a very full and varied career across the food service industry, spanning fine dining, bistros, hotels and airline catering. She has won awards for her dessert creations and keeps her love of writing alive with a food and travel newsletter on Substack. Chef Thaís joined UFS more than five years ago and since then has been helping our customers to find solutions to the biggest issues they face every day. She says very often those issues are the same regardless of what sector the customer is operating in. Solving them is about connecting with people and listening closely, something she very much enjoys. It was a pleasure to host the “Taste of transformation from farm to fork” workshop at FoodDrinkEurope 's #FoodFuture Ideas Fest in Brussels recently. Nona McElwee, Robbert de Vreede, UFS Chef Wesley Bay and William Anderson discussed a variety of imperatives, including incentives for farmers, the EU’s Common Agricultural Policy, sustainability benchmarking for agriculture and how consumers and chefs perceive regenerative agriculture. Great flavour - the backbone of great food service – starts in the field. That’s why it’s essential to support farmers who transition to regenerative agriculture, working with nature to protect vital ecosystems and improve supply chain stability. At Unilever, we are scaling regenerative agriculture where it matters - our high-volume crops like soy, rice, vegetables and rapeseed for our power brands Knorr and Hellmann’s. Getting the balance right is the secret sauce. You can also add the vibrant and herbaceous flavours of the Middle East to breakfast creations with a drizzle of zhoug, lemon juice, EVOO or just freshly chopped herbs like parsley, mint or fresh za’atar. 🥫 A pantry staple like Knorr Tomato Pronto provides a solid base for popular dishes like shakshouka and aloo bonda with eggs and tomato gravy.
